Priestley's Gourmet Delights, based in Morningside, manufacture and distribute a range of gateaux, cheesecakes, tarts and slices for the Australian and International food service markets. With the help of an ecoBiz rebate, Priestley's project (PDF, 174K)* involved installing a purpose built dishwasher to reduce water usage. Priestley's are also recycling their rinse water, have rationalised their refrigeration requirements and installed lower-emission gas powered ovens.
